Bread soup from Gimonde

with wheat bread

Ingredients for 4 people

  • 1 Wheat Bread from Gimonde
  • 1 onion
  • 1 bunch of parsley
  • 100 mL of olive oil
  • 1 tablespoon of butter
  • 1 piece of meat/lard/ham (to give flavor)
  • 1 egg / salt / 3 garlic cloves

Cut the bread into pieces and set aside.
In a pan put water, the piece of meat and half an onion. Let it boil for 20 minutes.
Meanwhile, put the olive oil and the butter in a frying pan on a low heat. When it is hot, increase the heat and fry the bread until golden brown (toasted).
Put the toasted bread in a bowl and the olive oil with the butter left over from the frying. Add the broth and let it boil for a few minutes.
Chop the garlic, the parsley leaves and the other half of the onion.
Pour over the bread and add this to the broth until you get the desired texture for the soup.
Break the egg over the soup still with the stove on and let it cook stirring occasionally. Turn off the stove and let it rest a few minutes before serving.
